Cooking has always been a passion of mine but I was ready for something new and exciting but also healthy. In browsing through my cookbooks in my kitchen, I came across the Weight Watchers Points Plus Cookbook, I purchased a while ago but never used.
What a great way to make some new and exciting meals, and at the same time, work towards the beautiful figure we all want to have. Whether or not you are a Weight Watchers member, you can enjoy these wonderful meals and stay within the recommended health guidelines and food intake levels, especially if you are trying to lose weight.
The first recipe on page 20, was the one I chose for today’s breakfast. A nice Sun-Dried Tomato and Mushroom Omelette to start the day with.
You are right to ask about having time to cook breakfast in the morning, a luxury many of us do not have. The answer lies in taking the time to plan. I find that planning ahead is one of the most important aspects of keeping a healthy lifestyle. The more you do it, the easier it becomes, or at least that’s what I hope for myself. And… the multiple rewards will make it a worthy time investment.
Equipped with a shopping list, I enjoyed my walk through the grocery store yesterday afternoon, where I picked up fresh herbs, fruits, vegetables, and spices I seldom use. Unpacking my groceries was exciting as I thought about all the wonderful moments I can create for my family with new fresh and healthy food ideas.
This morning I made the first recipe from the Weight Watchers Points Plus Cookbook. The omelette was delicious and fairly easy to make (I did skip the onions this time). Served with a bowl of fresh raspberries, it made for a festive start for an otherwise ordinary Monday morning. My husband and I enjoyed a nice and healthy breakfast together, that was also tasty and filling. This excellent Omelette is only 4 points per serving.
